The best kind of recipes for summer get-togethers are those that let you enjoy more time outside with your guests, and less time in the kitchen prepping and cooking.

This light, refreshing, and super-quick salad from our friends at PlateJoy features delicious grilled peaches and fresh-from-the-garden greens, and is the perfect addition to your next barbecue. We think it may just be the new favorite recipe of you and your friends!

Grilled Peach and Basil Salad with Hazelnut Dukkah

Ingredients:

  • 1 peach
  • ¼ cup hazelnuts
  • 1 tbsp sesame seeds
  • 1 tsp cumin seeds
  • 1 cup fresh basil
  • 1 cup fresh mint leaves
  • 1 cup arugula
  • 1 avocado
  • ¼ cup crumbled feta cheese
  • 1 tbsp balsamic vinegar

Directions:

Make the dukkah:

  1. Coarsely chop hazelnuts.
  2. In a dry skillet, combine hazelnuts, sesame seeds and cumin seeds.
  3. Toast 2 to 3 minutes, stirring often to not let burn.
  4. Remove from heat and sprinkle with salt.

Grill the peaches:

  1. Cut peach in half.
  2. Preheat a grill, grill panm or heavy skillet on medium-high; lightly grease.
  3. Add peach quarters and sprinkle with salt.
  4. Grill without disturbing 2 to 3 minutes, until brown and just starting to soften.
  5. Transfer to a plate.
  6. When cool, cut into bite-sized pieces.

Assemble salad:

  1. Rinse and chop basil and mint.
  2. In a salad bowl, combine basil, mint and arugula.
  3. Peel and slice avocado; add to the bowl, along with feta and peaches.
  4. Sprinkle with dukkah and toss to combine.
  5. Drizzle with balsamic.
